Chicken Gyros - WOW - Annie's Eats Recipe

 
This week my Mom and I tried the recipe for Chicken Gyros from Annie's Eats. They were AWESOME! Really, if you are craving gyros and live 2 hours away from the nearest place to find a decent one [like me!] this is a great fix! The tzatziki sauce is the key to this amazing sandwich in a pita pocket. I didn't even get to take a picture of it the night we first had it for dinner; cause we scarfed them down way to fast!
 
 
This pic is from my lunch today cause I had the left overs. I wasn't crazy about having carrots with it, but cucumbers, obviously, were fantastic. Trust me, there really is chicken in there! I just love that tzatziki sauce so much that I smothered it.


We bought strained Greek yogurt so that we didn't have to strain it ourselves; just to save time. But we did 'wring' out the cucmber; we put the shreaded pulp in a metal strainer and pressed it into the mesh with a paper towl that we had to wring out often til it was no longer dripping.

Herba Smoothie


Herba Smoothie, anyone?

I just got this herbal blend in the mail yesterday from the Bulk Herb Store. I put a rounded teaspoon in the blender with frozen berries we picked from our garden and wild off our property here in SE Missouri. Then I added some yogurt and apple juice and a fresh apple. Blended on high for a min. and presto! A beautiful smoothie full of natural vitamins and minerals found in their whole, untampered, form. Simple nutrition in a form our bodies can readily utilize.
